677 Prime chef whips up a victory in veal.

Mar. 15--Senior writer On a busy Saturday night at Angelo's 677 Prime in Albany, Jaime Ortiz, the restaurant's executive chef, and his chief lieutenant, Ken Kehn, supervise the feeding of more than 200 diners over five hours. One day last week, the pair had an equivalent amount of time and yet produced just two plates, each containing the same entree. Their efforts won them a statewide title and a $2,000 prize. Ortiz and Kehn easily took home the top award at the Veal Platinum Plate Competition, a veal cook-off that was the capstone of a conference titled The Veal Experience. Held at the New York Wine & Culinary Center in Canandaigua and sponsored by the New York Beef Industry Council, the promotional event drew only a few dozen attendees, many affiliated with the beef and veal industries and the rest seemingly connected to the participating restaurants.
